Norwegian Lompe Recipe

A little bit like a flour tortilla but potato is the hero of this dish! Add a Continental style frankfurt or sausage with mustard, ketchup & even dried onion flakes or potato salad & you have a yummy Norwegian hotdog that can be served on any occasion, from birthday parties to National Day celebrations.🎉🇳🇴

Norwegian Lompe

A little bit like a flour tortilla but potato is the hero of this dish! Add a Continental style frankfurt or sausage with mustard, ketchup & even dried onion flakes or potato salad & you have a yummy Norwegian hotdog that can be served on any occasion, from birthday parties to National Day celebrations.🎉🇳🇴

  • 1 kg Floury white potatoes mashed
  • 100 ml Wholemeal Spelt Flour
  • 150 ml Plain flour
  • 1 teaspoon Salt
  1. Boil potatoes until soft then peel & leave to cool before mashing

  2. Sift flours together, gradually adding to the potato mix & kneading until the flour is all mixed through & a soft dough forms

  3. Roll out onto a floured surface forming a long sausage shape

  4. Cut into small pieces approx. 5cm wide & roll each piece into a ball

  5. Using baking paper, press out each piece of dough to form a pancake shape approx. 2-3 ml in thickness

  6. Heat a non-stick pan on a medium heat & brush with a little oil

  7. Drop to a lower heat & cook each lompe until lightly browned on each side

  8. Serve with a Continental frankfurt or sausage & garnish with dried onion, ketchup & mustard of your choice 🙂

HINT:

Best potatoes to use – Kerrs pink potatoes or Kipfler

Spelt flour can be substituted with Rye flour or for a Gluten Free mix use Buckwheat flour and Gluten Free Plain Flour
