As one of the favourite desserts throughout Norway and Sweden, waffles can be found at roadside kiosks, on many cafe menus and most dinner tables. Eaten as a dessert, snack or lunch, in either sweet or savoury, they can be served with brown cheese, jam, berries and sour cream, yes that’s right ‘sour’ cream!

Norwegian Waffles
A great dessert or snack, either sweet or savoury!
Ingredients
- 2 cups plain flour
- 2 eggs
- 1 cup sour cream
- 2 cups Milk (approx.)
Instructions
- Beat together all ingredients until a smooth batter forms
- Grease heated waffle pan & pour mixture until it almost reaches the edge of the pattern (approx. 1 soup ladle)
- Cook a few minutes until golden brown
- Serve with fresh berries, strawberry or raspberry jam & a dollop of sour cream. Norwegians also love to serve them with their Ski Queen Brun Ost (Brown Cheese).
- Hint: add mashed sweet potato instead, baby spinach, carrot, chia seeds & oats to the batter to make them a bit healthier! 🙂 Vegetable can be pureed raw in a Nutri-bullet or blender. Cook & mash if you don't have either of these appliances.
- Brown cheese - a creamy caramel cheese made with goat or cow's milk (or both) 'Ski Queen' can be bought in Australia at some IGAs & fresh food market delicatessens.
